Especially when you can celebrate the start of Egg Salad Week!

Easter Monday, the traditional name for the Monday after Easter, marks the official start of Egg Salad Week—a wonderful way to use up those extra Easter eggs laying around the house. It is also the long-standing date for the White House Easter Egg Roll, an event for children which has taken place on the south lawn of the White House since the 1870s.

Here at the Smithsonian American Art Museum, Easter Monday is a great reason to enjoy one of our own eggs—a carving by folk artist Jeremy Anderson.
