Quaker
Square is the site of a renovated Quaker Oats rice puffing
facility that ceased operations in the late 1960's. The use
of existing architecture in the hotel features circular rooms
in the silos. The complex has been in a slight downturn since
the mid 90's, but still houses numerous offices and specialty
shops.
"In my childhood, coming downtown with my father meant
that the entire place would smell like cooking rice. Some
felt it a nuisance, but I loved it."
P. Lichty, 2001
